This 8 year old MK Rhapsodia starts with intense aromas of rose and dry fruits, notes of honey, wax, herbs, plums and peaches and a persistent length. Has a cheesy, waxy edge and some tannins. From qvevri aging it has a beautiful amber color, a rich and full body. Luscious flavors of fig, tobacco and spices persist to a smooth finish.
The wine is fermented and aged at least 12 months in Qvevri clay vessels, with skin-contact 6 months. Qvevris are buried in the ground. This ancient technique of maceration at a constant underground temperature produces smooth flavor balance between tannins, antioxidants, polyphenols and acidity in wine. We keep intervention to the minimum. This wine is great for aging.
